It’s essential to peel broccoli stems.
I learned that a long time ago when I took Chinese cooking courses at the China Institute in New York (with the great teacher, Florence Lin).
I’d eaten broccoli before that of course, but never peeled. My mother never peeled the stalks. The stuff in the frozen packages wasn’t peeled.
But Ms. Lin showed the class how to do it and it was a revelation. Because broccoli can be as tough as a rubber tire.
But not if you peel it!
Ms. Lin’s broccoli was crispy and tender. And so was mine forever after.
Here’s how to do it. Look at the photos. The first one shows a stalk of broccoli with the florets attached.
Take a small sharp knife and remove the florets. Then cut about an inch off the bottom of the stalk and with that cut begin to peel back the thick outer skin (2nd photo). You will see that it peels back almost all by itself. Then, using the knife, peel back the skin on the other parts of the stem, beginning at the cut end at the bottom (photo 3). Cut the stems into bite size pieces and add them to the cut up florets. You’re now ready to cook. Try the recipe I posted yesterday.

Ingredients
3/4 cups whole wheat flour
1/2 tsp baking powder
1/4 ts salt
1/2 cup apple sauce
1/2 cup baking cocoa (will have to see if they sell dark chocolate in baking cocoa form)
1/2 cup honey
1 tsp vanilla
3 tbsp egg whites (1 egg can also be used, however this will add cholesterol to your finished product)

This dough takes two minutes to whip up, so in under 10 minutes, you can be scarfing down delicious coconut flour cookies. And really, check out these stats!
Nutritional Info
- *Update: There has been some question about the nutritional info, and for clarification, these having only 6 calories each is based upon a bite-sized cookie. If you only make 8 cookies out of this recipe to make them more traditional sized, they will have about 15 calories each. Still a calorie bargain, if you ask me!
- Per bite based on 16 bites
- Calories: 6 (about 8 or 9 with chocolate chips)
- Fat: <0.5 grams
Ingredients
- 2 Tablespoon coconut flour
- 2 Tablespoon mashed banana or applesauce (I prefer banana. Personally, I think applesauce gives them too much of an apple-y taste. That’s just me.)
- pinch salt
- stevia or other sweetener, to taste
- 1/8 teaspoon baking powder
- 3 Tablespoon almond milk, or milk of choice
- chocolate chips
Directions
- Preheat oven to 350F.
- In a small bowl, mix coconut flour, baking powder, and salt.
- Add in masked banana or applesauce and stir.
- Add in almond milk, one tablespoon at a time until fully incorporated.
- Stir in chocolate chips.
- Drop dough by tablespoon or teaspoon, depending on how big you want them, on a parchment lined baking sheet. (I used a silicone mat.)
- Flatten the dough into cookie shapes.
- Bake in the oven at 350F for 10 minutes.
- Let cool before scarfing them all down.
- By the way, you are allowed to eat the entire batch! ;)
